Migration to Vue.js 3 and vite

📣 We have completed our migration to Vue.js 3, big thanks to @dpgiakatos for the hard work! 🥳 🎉

The main changes include (see the #669 for more details):

• Vue.js Version Upgrade: Upgraded Vue.js from version 2 to version 3.
• Composition API Integration: Leveraged the Composition API for cleaner and more modular component
• Improved Reactivity: Vue.js 3 introduces a more efficient reactivity system, resulting in better performance and a smoother user experience.
• Optimized Bundle Size: The new version includes tree-shaking improvements, leading to a reduced bundle size and faster loading times.

Please update your fork and development environment. You can now run the code on the latest version of the node.js. Also we now use vite to build the website. See the README for more details.
