After setting or resetting WLAN info, the device restarts so that it can try to connect to the default (there can be a default in ROM).

This is not a crash - but it might appear as one. There is debug output explaining it will restart but not visible.

=> Maybe we could add something to the UI to let users know it will restart?
=> Maybe there is some USB status/command that can be used to make the restart not appear as a crash?

Windows: I'm not sure what you would call it, but if the complete main Window for an application (piggui) disappears without notice and does not re-appear with 10 seconds or so I'd call that a Crash? Windows Desktop Alt/Tab does not find any instance of the running app.

Where would I find the related Debug output?

Ah, I understand now. I thought you mean the porky device crashed, but you mean the piggui GUI.

That maybe due to a bug in iced_aw menus that I have reported - if you still have the menu open when piggui detects the device has disconnected it and tries to update the menu to not have it any more:

which tracks this issue: iced-rs/iced_aw#301

Do you think that's it?

If so, a "+1 on the iced issue could maybe help convince them to fix it :-)
