The images displayed on the right panel doesn't seem to be thumbnailed.
It could be quite a problem, particularly on mobile devices.
For example, on this page http://angers.io/#/place/82, the logo has a resolution of 6802x2602 and weighs 1.5mb.

Totally agree.

We'll let our users upload their logo and will resize it on the fly, using the Paperclip gem. I don't know, right now, if we'll continue to let them use URI, and what would be the best way for handling resizing in this case.

To handle URIs, should it be possible to download the image and resize it on the server like if it was uploaded?

It is, but it'll need some hacks. I have some research to do, to find the best way.
