Use Nextflow stable version 24.04.4 #365

Currently the Gitpod container is using 24.02.0-edge. We should update to 24.04.4 stable.

Any specific reason to update to this latest stable version?

Ideally, we have to test all training material with the new version to make sure no example is broken, so I'd rather not update unless there's some new feature that has an impact on the examples or on what we're teaching. This implies we will probably update it to another edge version past 24.04.4 at some point in the near future.

There's also scheduled training sessions in the next weeks. We should be careful on when we do that.

Mainly because if people install Nextflow they will generally install 24.04.4, so we should be consistent with 'normal operation'.

Is there any reason we use an edge version at the moment?

OK so I tried to run something in a training only for it to fail because it was using a feature that only existed on 24.04.4! I think we should keep up with the latest stable where we can, but a month or two after release for testing time.
