Update workflows to utilize the new AnalogIO / DigitalIO / etc. classes

With PR open-ephys/bonsai-onix1#301 in the main repo, all existing workflows that contain the newly obsolete classes will be rendered with cross-hatches. See below for the old BreakoutAnalogInput node;

While I have not tested this, I assume it will appear this way when the SVGs are exported from Bonsai; as such, we should update the workflows to use the correct operators.
