How to remove an option from a dropdown list?

I am dynamically populating a dropdown option list as a result of a database query and it works nicely. I would like to be able to remove a selected option when a delete button elsewhere on the page is pressed. Is there anything in the API that supports this? Or is there some other way to to it?
