Description

This PR adds a variant for Alpine 3.21 and drops the 3.19 variant at the same time.

Requires docker-library/official-images#18024.

Thanks for the quick update! :)

We're using the alpine:3.21 image and installing nodejs and npm with apk until we can use the official node docker image.
